matt snapped this amazing pic of penelope and i couldn't help but share! she so hip.
matt and i have set a 6pm dinner time so we can eat dinner at the table, and catch up on the day. so last night we cooked a pretty darn good dinner. pork chops, brussel sprouts and salad. all super easy (because that's all i do) and pretty healthy.
pork chops: rub em down with salt, crushed peppercorns, and sugar. coat a skillet with a good amount of olive oil and turn up to med-highish. throw the chops in the skillet, cook about 3-5 minutes on each side or until there's no pink in the middle.
brusel spouts: preheat the oven to 400. place foil on a cookie sheet pan thing. put the brussel sprouts in a bowl, douse with olive oil, salt and pepper. you could add garlic but not necessary. spread the brussel sprouts on the cookie sheet and bake for 35-40 minutes. and voila you're done!
